rainbow salad

A quick and easy rainbow salad to whip up for a delicious lunch. Phytonutrients are your friends.

Ingredients

  • Mesclun Salad Mix
  • Baby Rocket
  • Cooked Chicken Breast
  • Avocado
  • Brie
  • Kalamata Olives
  • Red Onion
  • Capsicum
  • Sesame
  • Pumpkin Seeds
  • Sunflower Seeds
  • Sesame Seeds
  • Flax Seeds
  • Olive Oil
  • Lime Juice
  • Black Pepper

Method

  1. Add salad leaves to a large salad bowl. Slice the red onion, capsicum, avocado and brie, add to salad leaves.
  2. Shred the chicken breast and add to the salad leaves with a sprinkling of seeds, lime juice and olive oil to taste.
  3. Gently combine and season with black pepper before serving.
